Whisky, or whiskey, is a spirit distilled from fermented grain mash and matured in wooden casks. A mash is made from the grain, and is then allowed to ferment. Yeast converts the sugars in the mash into alcohol. From that you get a liquid with an alcohol content of about 7.5%. This liquid is distilled, which eliminates undesirable substances and increases the alcohol percentage. After that it is diluted until the alcohol content is 65%, then stored in oak casks to mature. After a certain amount of time (depending on the applicable law), it can be called whisky and can be bottled. Unlike with wine, the maturation process stops and the drink keeps for a long time without change of flavour. The age of the whisky therefore refers to the time spent maturing.
